There is a small shop in one of the side streets of Dien Bien Phu. They don't speak English but the products are excellent and good prices and they have exactly the kind of thermometer your looking for (see URL below).

You can also check 2 stores on Yersin street in Q.1, they have a good selection of professional kitchen ware. I don't know the names but the address is Yersin 20 and Yersin 59.
