OzTops alcojuice

Here's my first one for you, simple to make and drinkable as a Sangria or just a fizzy pop type drink. The OzTops kits is great for instant booze, it's ready in just a few days, but benefits longer for a much higher alcohol content.

Equipment needed
1 pack of 5 OzTops kit (do a google or ebay search)
5 x used 1.5L fizzy drink bottles (I find Cola Cola best)
7 x 900cl bottles Rausch grape juice. White works best but red also works well
1/4 capful OzTops yeast per bottle, or use champagne/sparkling wine yeast when the other stuff runs out
220g granulated sugar per bottle

1. Sterilize the coke bottles with hot water

2. The Rausch juice should be warm, leave it in the sun for 15 mins then pour in 1 bottle per coke bottle.

3. Add 220g sugar to the juice

4. Shake the bottles until the sugar dissolves

5. Add the remaining juice to the coke bottles, up to about 2" from the top

6. Fit the OzTop cap tightly

7. Leave in a warm place (but not outside or in direct sunlight) for 6-7 days for a strong brew. It can be necked in as little as 3 days if you like your hooch on the young side...

8. If you want, decant the hooch into fresh bottles (I don't tend to bother and use the same ones), replace the OzTop caps with ordinary coke caps and store the hooch in the fridge for 1-2 days.

It'll keep in the fridge for 7-10 days before drinking, longer if you decant it into fresh bottles. The yeast supplied with the kit is good for 5-6 batches, after it's finished just use a champagne or fizzy wine yeast. Clean and sterilize the caps after each use and they'll last for ages. Don't worry if the brew goes cloudy while it ferments, try keeping it somewhere cooler. It clears much better if decanted first before going in the fridge.

There are loads of options to this recipe, using different juices, amount and type of sugar and fermenting/storing time.

*** Always save the Rausch juice bottles, they make excellent beer bottles!

A word to the wise, (from the stupid that became wise in the middle of the night)....

DON'T, I repeat, DON'T reuse your old Beck's bottles when bottling beer.  Too much sugar in the bottle and these things become the equivalent of pipe bombs.   

I suspected that the caps would pop off the bottles if too much pressure built up...wrong.  Turns out the buggers will explode and spray high velocity shards of glass all over the place.  Slight miscalculation of consequences.

Think I 'll stick with plastic from now on.  What a waste of 23 litres.

Try using light honey (the local Libyan stuff) instead of sugar - it gives a more mellow taste
